Annalee DePaoli decided at age 8 to turn down one dream for
another.
Instead of tackling the goal of one day becoming a Supreme Court
Judge, she knew she would be a chef.
“My mother told me you had to be a lawyer to be a judge, and I
didn’t want to be a lawyer,” DePaoli said.
The deal was sealed.
DePaoli joined the Square Café family in October of 2006 as head
chef, bringing the quality and value of each menu item to an all new level.
A native of Pittsburgh since the sixth grade, DePaoli graduated
from Alderdice High School in 1996. She began cooking in kitchens at every
chance she could get at age 16.
Soon after high school, she was on her way to the prestigious
Johnson and Whales Culinary Institute in Rhode Island, where she earned an
Associates’ Degree in Culinary Arts, as well as an Associates’ Degree in Baking
and Pastry. She has been working in Pittsburgh restaurants since 2000.
A love of good food runs in the family as DePaoli’s grandmother
was an excellent baker and both of her parents loved to cook as well. DePaoli
cooked her first meal, Orange Chicken, at age 10. Today, DePaoli loves to throw
elaborate, themed parties while cooking dinner for her friends.
DePaoli’s goals for the future of the Square Café include
providing customers with consistent, fresh and seasonal meals while providing an
increase in catering events and possibilities.
DePaoli loves the tight-knit neighborhood that the Square Café
feeds from.
“It’s a little community and a lot of our customers are not only
regulars, but daily regulars, and it’s nice to have that,” DePaoli said. “The
servers know most people’s names; I know most people’s orders.”
The chef’s favorite aspect of culinary arts: the pleasure people
get out of her work.
While March was officially named, “Crepe Month” at the
Square, DePaoli says customers should be on the look out for different crepe
specials every week.

Wonderful woman, café owner, cyclist and mother are just a few words that can
be used to describe Sherree Goldstein, the proud owner of the now four-year-old
Square Café. While the past few years have had their ups and downs, she says the
Café is comfortably nestled in an upstage. From the dedicated and fantastic
staff to the lovely eclectic customers, Sherree loves spending her days with the
many personalities of the Square Café.
Contrary to popular belief, Sherree does not spend all of her time at the
Café. She is also an adviser for an Experiential Therapy course offered by
Gateway Rehabilitation Center. This course takes participants through a journey
of self-exploration by way of problem solving, team work and risk taking, and
encourages individuals to go beyond their perceived limits.
Sherree’s favorite espresso drink is a double decaf soy
latte and her favorite menu item is a Square Burger on a salad with goat cheese.
